Brodetto is a fish stew found in many variations along the Adriatic coast. I got this recipe from my boyfriend's colleague who is from Herzegovina. He sent me his family recipe that is more traditional, along with this one, that uses canned tuna. This is something he came up with and I had to make it, because of the name :) It's rich and tasty and as the name says, really irresistible!
Alekasandar's Irresistible Brodetto
400 g pieces of canned tuna*
1 large red onion
400 ml tomato puree
300 ml white wine
salt, ground black pepper
1 tsp hot paprika
1 tsp sugar
1 Tbsp flour
1 bay leaf
a handful of pitted black olives
oregano
oil
*Do not take tuna canned in oil, but in water. And make sure it's in larger pieces.
Fry finely chopped onion on some oil. Add tuna strained from liquid and stir everything for a few minutes. Stir very carefully, you don't want tuna to lose it's shape. Add tomato puree, 400 ml water, salt to taste, sugar and stir. Add flour, paprika and pepper. Stir again and let it simmer on medium heat.
When approximately half of liquid evaporates add wine and 100 ml water, bay leaf and chopped olives. Let simmer for another 45 minutes. About 5 minutes before it's finished, add some oregano.
This can also be made with fresh tuna, only you will have to fry it a bit more at the beginning.

ReplyDeleteUvijek se divim tvojim fotografijama koje su tako primamljive. Dobro izgledaju ovi komadi tunjevine, ne bi se reklo da su iz konzerve.
klasične brudete baš i ne volim, ali ovaj mi djeluje kao nešto što bi mi se sigurno svidjelo! odlično :)

ReplyDeleteSličica je baš predivna, dalmatinski pravi brodet sa svježom ribom iz mora obožavam, ovaj s tunom iz konzerve još nisam probala, ali zvuči fino!
ReplyDeleteJa nisam ljubitelj brudeta, jer me smeta milijun malih koščica koje lovim po "juhici". I oduvijek pitam ove svoje Dalmoše zašto se to ne bi moglo napraviti od poštenih komada ribe, a ne od hrpe malih ribica. Odgovor je uvijek da mješavina tih malih ribica kojekakvih ( ima čak i određeno koje su najbolje za brudet) daje jelu ton. Pa dobro, poštujem, ali ja bih ipak probala ovaj tvoj, jer djeluje kraljevski! :)

I'm so excited to try this - not only do my kids love everything with tuna, but it's finally a fish stew recipe that doesn't require fresh fish. Fish has always been a 'fair weather food' for me, but this recipe is very practical and handy for those days when the weather is yukky and you just don't feel like going out to do the shopping. ReplyDeleteovo je jedan izvrsni brzinski i jednostavni brodet, a u okus ne sumnjam uopće..nikad se ne bi sjetila staviti tunu iz limenke, odlična ideja. i predivno servirano! :)

ReplyDeleteKrissy, this is not a typical brodetto. The ones that are made in Italy and Dalmatia are completely different. This is something my friend came up with, based upon his family recipe. The real brodetto is made with combinations of sea fish, prawns and muscless for example. I'll try to publish the real recipe soon.
