Pork and Fava Bean Stew
(recipe adapted from Sale & Pepe magazine, Serbian issue for November 2007)
400 g boneless pork
100 g dry fava beans
1 carrot
1/2 tsp dry rosemary
1 celery stick
1 onion
200 ml milk
1 Tbsp flour
clear broth
1 tsp dry parsley leaves
10 g butter
olive oil
salt and pepper
Soak beans overnight. On the day of the preparation peel each bean.
Finely dice onion, carrot and celery stick. Heat some oil and butter in a pan and saute diced vegetables and rosemary until soft. Add diced pork and fry for about 10 minutes, then add flour and stir. Add salt and pepper and milk. Let simmer for about half an hour on low heat. If too much liquid evaporates, add broth.
Add peeles fava beans and cook until the beans are soft. At the end stir in parsley.

ReplyDeleteOdličan izbor recepta i mahunarke. Zaposavljene je kod nas čak i pomalo zaboravljena. Na pijaci zemunskoj samo jedan deka prodaje bob! Odlično Marija!
