Old Fashioned Quince Cake



Old Fashioned Quince Cake

180 g grated quince*
90 ml oil
220 ml quince juice
50 g sugar
200 g flour
2 tsp baking soda
1/2 tsp baking powder
a little salt

*Quince can be substituted with apples or pears. Then you should put apple or pear juice. Also, if you don't have juice at hand you can use just water.

Puree grated quince, oil, juice and sugar in a blender. Transfer into a bowl. Sift in flour, baking soda, salt and baking powder. Carefully stir with a whisk. Grease bundt cake pan, add a few tablespoons of flour and shake so the flour coats the inside of a pan. pour in the batter. Bake in a preheated oven on 180&C for about 40-45 minutes, or until a toothpick inserted comes out clean. Dust with powdered sugar before serving.

    I just have 2 questions: when do we add the oil and doesn't it need eggs?

  11. @gasparzinha - Thanks for noticing about oil, it was a typo and I have corrected it. You add it at the beginning. It doesn't need eggs because it's vegan. I made it for the fasting menu. Hope it turns out ok and let me know how you liked it when you make it :)
