Creamy Limoncino



Creamy Limoncino

skin of 5 lemons
500 ml grain alcohol (96% ethanol)
650 g sugar
1 l milk
2 bags (20 g) vanilla sugar

Remove the skins from lemons very thinly. Dice them and put in a bottle with alcohol. Wrap the bottle with aluminum foil and keep in a dark place for 6 days.

On the 7th day, heat milk with sugar and vanilla sugar, not to boil, but to melt sugar. Remove from heat and let cool. Strain alcohol into cooled milk.

Makes a little more than 1,5 l. Keep in the fridge.

  11. I am not sure about substituting alcohol here. You could put lemon zest in vodka for example, but then you'd have to reduce the amount of milk. And I am not sure it would taste good.

    Re: substitute for alcohol - vodka is definitely used in such cases, since it's the most neutral of all spirits. I'd also recommend it.
    But, of course, as Marija said - reduce the amount of milk, since vodka has half of alcohol content of pure grain alcohol.
