Squashed New Potatoes


This recipe is ridiculously easy and extremely tasty. It comes from Sale&Pepe Serbian issue for June 2009.

Squashed New Potatoes

Take about 12 equally sized, small new potatoes, place them in a pot, pour water enough to cover them, add a lot of salt and cook al dente. When they're done, wipe them with a paper towel. Place a cloth on top of each potato and gently press with your hand. You want them squashed to the thickness of about 1 cm. Line oven pan with baking paper, place potatoes on it, season with sea salt and a lot of oil and bake in a preheated oven on 200°C for about 30 minutes or until they're golden.

Instead of oil, I used mixture of oil and pork fat that I had leftover from making Burek.

  6. Super! I bought some new potatoes yesterday with the purpose of making them in this style. I am thinking a little rosemary and pimenton might finish them perfectly. Looks beautiful!

    krasno marija. obozavam mlade krumpire pecene u pecnici. ovaj jednostavan i ukusan nacin pripreme mladih krumpira i sama prakticiram.:)
    @haleysuzanne great idea! I'd also add a large head of garlic cut in half and drizzled with some olive oil. It becomes so creamy and yummy once baked and it's lovely spread on toast.

  9. @monsoon, @haleysuzanne - There was one more very interesting recipe in the same issue of the magazine: you cut potatoes in half and make one slice in the middle of the cut and place one small bay leaf in it. Season with sea salt, add oil and bake in the oven. It was also delicious, but I couldn't find fresh bay leaves so my dried ones burned a little.

  12. I saw these on Pioneer Woman a few months ago, they are called crash hot potatoes. It is an easy recipe, but you didn't come up with it. No offense!
