Pasta dough
100 g wheat flour
50 g buckwheat flour
a pinch of salt
2 eggs
Just knead all the ingredients into smooth dough, and leave in refrigerator for half an hour. For shaping tagliatelle I used my Ampia pasta machine, with thickness set to 4. Cook pasta in a lot boiling salted water for about 15 minutes.
Almond pesto
20 g almonds
20 g parmesan cheese
2 Tbsp olive oil
3 Tbsp tomato puree
pepper to taste
1 clove garlic
1 Tbsp sour cream
1,5 Tbsp parsley leaves
Put almond, parmesan, garlic and parsley in blender and ground everything. Pour olive oil, tomato puree and blend some more. Season with sour cream and pepper.
Coat pasta in pesto and serve topped with tobacco cracklings. Tobacco cracklings are speciality of Valjevo region of Serbia. If you can't find them, I guess you can just use pork floss.

Veoma interesantna tjestenina i umak. Potpuno sam zaboravila na tzv. duvan čvarke, pa sam se ovdje kod prevoda zamislila, kakvi li su to čvarci sa (od) duhana :-)
ReplyDeleteHe, da samo znak kako su stranci lose reagovali na rec duvan :) Bez da su procitali da se on u stvari i ne koristi tu.
ReplyDeleteA ne znam jel znas da u Srbiji vlada vec zabrinjavajuca nestasica duvan cvaraka. Neki se lik setio da ih patentira i zabranio svima ostalima da ih prave. Naravno, posto je on mali proizvodjac, nema ih nigde :)
