Pumpkin gnocchi

Picture 029

Recipe (adapted from vegalicious):

1/2 kg pumpkin
2 cups flour
1 pinch of garlic powder
1 pinch of pepper
1 Tbsp olive oil
1 tsp nutmeg
150 g bacon, cut
1 Tbsp sage leaves
150 g feta cheese
salt to taste

Cut the pumpkin, peel, de-seed and cut into medium size chunks. Cook in a pot with very little water until soft. Mash with a potato masher. Add garlic powder, pepper, nutmeg, olive oil and mix well. Slowly mix in flour and knead until it forms a smooth dough. If it is too wet, add a bit more flour until it is a smooth ball of dough. Let it rest for 30 minutes. Shape gnocchi. Cook them in boiling water until they float.

In a sauce pan, saute garlic with bacon. Ad salt and sage.

When ready to serve, grate feta and pour bacon over the gnocchi and mix well.
